“白酒冰镇后变浑浊、香气变淡?”
——是正常物理现象很多人冰镇白酒后会发现,酒闻着没那么香了,酒体还微微浑浊,就以为是低温“破坏”了酒质。

四 | 中国食品发酵工业研究院酿酒技术部主任、国家级白酒评委韩兴林解释,其实这是很常见的物理现象,原理也很简单——大部分情况下温度越高,物质的挥发就越活跃。

五 | 不只是香味,其他味道也是一样的。比如夏天我们会更敏锐地感受到周遭的各种味道,但是冬天反而不觉得。

六 | 又比如热咖啡刚刚做出来时香味很浓,冰咖啡的香气就没那么张扬。温度改变的从来不是风味的有无,而是呈现的方式。白酒也是一样的,低温从来不会“消灭”白酒的香气,只是放慢了香气的挥发速度。目前的研究显示:白酒在8到12摄氏度之间,辛辣感会被明显压制,入口更顺滑,香气由“突出”转为“幽雅”,酒体口感呈现出“净爽、柔和、协调”——这是一种风味呈现的转向。至于浑浊,原理也很简单:低温下,酒中的脂类物质会析出,就像天冷时食用油会凝固一样,属于正常物理反应,而不是变质的表现。

——标准管品鉴,不管日常小酌有细心的消费者发现,白酒国标标注品鉴温度为18-25℃,因此质疑:日常冰镇喝白酒,是不是不符合行业标准、不算正规喝法?这一点,完全是搞错了场景和主体,全国白酒标准化技术委员会、全国酿酒标准化技术委员会秘书长宋全厚专门澄清:大家完全不用纠结,《白酒质量通则》中规定的18-25℃,仅仅针对专业品酒师的品鉴打分场景,这是考试,不是日常。考试需要统一考场温度、灯光,是为了保证品鉴评测的公平公正,规避环境温度对专业打分的干扰,而不是约束普通消费者的日常饮用习惯。宋秘书长强调,现行的白酒国家标准中,没有任何一项条款“禁止冰饮”。优质的白酒冰饮,不仅合规、科学,还安全,大家完全可以按照自己的口味随心喝。

十一 | 这其实是源于我们看到了很多影视里关于温酒的故事,从而对酒文化的片面认知。这就像古代人夏天想吃冰西瓜,得等到冬天凿冰储存起来,普通人家哪有这个条件?你能说大家都不想吃冰西瓜吗?主要还是条件不允许,“古代贵族夏季早就有冰酒消暑的做法,只是受限于当时的制冰、存冰技术,没能在民间普及,并非古人不认可冰饮。

十二 | ”中国食品发酵工业研究院原副院长、教授级高工张五九说。另一个角度来说,古人普遍温酒,也和当时的酿造工艺直接相关。旧时酿酒技术相对粗糙,酒中杂质较多,加热能挥发掉部分有害醛类物质、改善口感,这更像是特定技术条件下的“最优解”,而非什么不可动摇的铁律。
